Bacon Guacamole Grilled Cheese Sandwich

A buttery and toasty grilled cheese sandwich stuffed with creamy guacamole, crispy bacon, and melted cheese, offering a perfect blend of savory and fresh flavors.

  • 2 slices sourdough bread
  • 3 tablespoons softened butter
  • 1 cup shredded Mexican cheese blend
  • 4 slices bacon
  • 3 tablespoons guacamole
  • Optional: crumbled tortilla chips for added crunch

Instructions

  1. Cook the bacon until crispy, either by baking at 450°F for about 15 minutes or microwaving approximately one minute per slice.
  2. Butter one side of each slice of sourdough bread and set aside.
  3. Preheat a skillet over medium-high heat.
  4. Place one slice of bread, butter-side down, onto the skillet.
  5. Top with half of the shredded cheese, then the cooked bacon, followed by the remaining cheese.
  6. Spread guacamole on the non-buttered side of the second slice of bread and place it guacamole-side down on top of the sandwich.
  7. Cook for about 3 minutes or until the bottom is golden brown and grilled to your liking.
  8. Carefully flip the sandwich and cook for another 3 minutes until the other side is golden and the cheese is melted.
  9. Remove from heat and serve immediately.

Notes

For extra texture, add crumbled tortilla chips inside the sandwich before grilling. Use a Mexican cheese blend or a mix of jack and cheddar cheese for best flavor. Cooking bacon in the oven ensures even crispiness without splatter.
