For the Crust:
- 4 slices of bread
- 4 slices of cheddar cheese
- 6 slices of bacon, cooked crispy
- 1 ripe avocado
- 1 small tomato, diced
- 1/4 red onion, finely chopped
- 1 lime, juiced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp butter, softened
Instructions
1. Prepare the Crust:
- In a bowl, mash the avocado and mix with diced tomato, red onion, lime juice, salt, and pepper to make the guacamole.
- Butter one side of each bread slice.
- Place a slice of cheese on the unbuttered side of two bread slices.
- Spread guacamole over the cheese, then top with crispy bacon slices.
- Place the remaining cheese slices on top of the bacon, then cover with the other bread slices, buttered side out.
- Heat a skillet over medium heat and cook each sandwich for 3-4 minutes per side, until golden brown and cheese is melted.
