Bacon Guacamole Grilled Cheese Sandwich

A delicious twist on the classic grilled cheese sandwich with crispy bacon and creamy guacamole.

For the Crust:

  • 4 slices of bread
  • 4 slices of cheddar cheese
  • 6 slices of bacon, cooked crispy
  • 1 ripe avocado
  • 1 small tomato, diced
  • 1/4 red onion, finely chopped
  • 1 lime, juiced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter, softened

Instructions

1. Prepare the Crust:

  1. In a bowl, mash the avocado and mix with diced tomato, red onion, lime juice, salt, and pepper to make the guacamole.
  2. Butter one side of each bread slice.
  3. Place a slice of cheese on the unbuttered side of two bread slices.
  4. Spread guacamole over the cheese, then top with crispy bacon slices.
  5. Place the remaining cheese slices on top of the bacon, then cover with the other bread slices, buttered side out.
  6. Heat a skillet over medium heat and cook each sandwich for 3-4 minutes per side, until golden brown and cheese is melted.

Notes

You can customize the seasonings to taste.
