Bacon Guacamole Grilled Cheese Sandwich

A delicious twist on the classic grilled cheese sandwich, featuring crispy bacon and creamy guacamole.

For the Crust:

  • 4 slices of bread
  • 4 slices of cheddar cheese
  • 6 strips of bacon, cooked crispy
  • 1 ripe avocado
  • 1 small lime, juiced
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter

Instructions

1. Prepare the Crust:

  1. In a bowl, mash the avocado with lime juice, red onion, cilantro, salt, and pepper to make the guacamole.
  2. Butter one side of each slice of bread.
  3. Place a slice of cheese on the unbuttered side of two slices of bread.
  4. Spread guacamole over the cheese, then top with crispy bacon strips.
  5. Add another slice of cheese on top of the bacon, then cover with the remaining bread slices, buttered side out.
  6. Heat a skillet over medium heat and cook each sandwich for 3-4 minutes per side, until golden brown and the cheese is melted.
