Avocado Grilled Cheese Sandwich

A delicious grilled cheese sandwich featuring creamy avocado, fresh tomato, and melted mozzarella cheese with a hint of Parmesan.

  • 2 slices bread
  • 1/2 cup mozzarella cheese, shredded
  • Shredded Parmesan cheese to taste
  • 23 tomato slices
  • 1/2 avocado, sliced
  • 2 tablespoons butter, softened

Instructions

  1. Butter the outside of each bread slice generously.
  2. Heat a skillet or griddle over medium heat.
  3. Place one slice of bread butter-side down on the hot skillet.
  4. Spread 1/4 cup mozzarella cheese on the bread, add a sprinkle of Parmesan, then layer tomato slices and avocado slices.
  5. Top with remaining 1/4 cup mozzarella cheese.
  6. Place second buttered bread slice on top, butter-side up.
  7. Cook until the bottom is golden brown, approximately 3-4 minutes.
  8. Carefully flip and cook the other side until golden and cheese is melted, approximately 3-4 minutes.
  9. Remove from heat and serve immediately.

Notes

To prevent the avocado from browning, slice it just before assembling the sandwich. For extra flavor, consider adding fresh basil or a thin spread of pesto. Use high-quality mozzarella for best melting results.
