Sausage Tortellini Soup

A creamy and flavorful sausage tortellini soup with kale, seasoned with basil, oregano, hot sauce, and mustard powder, perfect for a quick 30-minute meal.

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon hot sauce
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups chopped kale
  • 9 ounces cheese tortellini
  • Salt, to taste
  • Red pepper flakes, for garnish (optional)

Instructions

  1. In a large pot, cook the sausage over medium heat until browned, breaking it up with a spoon.
  2. Add the diced onion and minced garlic to the pot and cook until softened, about 3-4 minutes.
  3. Sprinkle the flour over the sausage mixture and cook, stirring constantly, for 1-2 minutes to remove the raw flour taste.
  4. Stir in the dried basil, oregano, hot sauce, mustard powder, and black pepper until well combined.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Bring the soup to a boil, then reduce heat and simmer.
  6. Add the chopped kale and cheese tortellini to the pot. Cook for 3-5 minutes, or until the tortellini is tender and the kale is wilted.
  7. Taste the soup and add salt as needed.
  8. Serve hot, garnished with a pinch of red pepper flakes if desired.

Notes

The hot sauce and mustard powder add subtle depth to the soup’s flavor. If kale is unavailable, spinach or Swiss chard can be used as a substitute. Serve with garlic bread or biscuits for a complete meal.
