Peruvian Chicken with Green Sauce

Juicy roasted chicken served with a vibrant and spicy green sauce.

For the Crust:

  • 4 chicken thighs (bone-in, skin-on)
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup fresh cilantro
  • 1/2 cup mayonnaise
  • 2 jalapeños (seeds removed)
  • 2 cloves garlic
  • 1 tbsp lime juice
  • 1/4 cup sour cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix chicken thighs with olive oil, cumin, smoked paprika, salt, and black pepper. Arrange on a baking sheet.
  3. Roast chicken for 30-35 minutes until fully cooked and skin is crispy.
  4. While chicken cooks, blend cilantro, mayonnaise, jalapeños, garlic, lime juice, and sour cream in a food processor until smooth.
  5. Serve chicken hot with the green sauce on the side.
