Easy Apple Pie Egg Rolls

Crispy on the outside with a tangy and moderately sweet green apple filling, these Apple Pie Egg Rolls make a great choice for breakfast or brunch.

  • 4 medium Granny Smith apples, peeled and diced
  • 3 tablespoons unsalted vegan butter or coconut oil
  • 4 tablespoons brown or coconut sugar
  • 1 1/4 teaspoons ground cinnamon
  • 2 teaspoons lemon juice
  • 1 tablespoon all-purpose flour
  • 8 egg roll wrappers (vegan or regular)

Instructions

  1. Melt 2 tablespoons of vegan butter in a large non-stick pan over medium heat. In a medium bowl, add diced apples and sprinkle with 3 tablespoons of sugar and 3/4 teaspoon cinnamon.
  2. Add apples to the pan and cook until softened, about 5 minutes. Sprinkle with flour, lightly stir, and cook for 1 more minute. Remove from heat, stir in lemon juice, and mix to combine.
  3. Place an egg roll wrapper on a working surface with one corner facing you. Lightly moisten the edges with water.
  4. Place about 1/3 cup of apple filling in the center of the wrapper and tightly fold the bottom corner over the filling. Fold corners in from the sides, then roll the log up and seal the top corner. The filling should be enough for 8 logs.
  5. In a shallow bowl, combine the remaining 1 tablespoon of brown sugar and 1/2 teaspoon of cinnamon. Set aside.
  6. Melt the remaining 1 tablespoon of butter in a shallow skillet over medium heat. Add apple pies and cook on each side, turning frequently until golden brown, about 4 minutes per side.
  7. Remove from the skillet and dredge in the sugar-cinnamon mixture. Serve.

Notes

For best results, use Granny Smith apples for a tangy flavor. The egg rolls can be served warm and are delicious with a scoop of vanilla ice cream or a dusting of powdered sugar.
