  • 2 cups granulated sugar
  • 4 large eggs

  • 2 to 3 Granny Smith apples, peeled and chopped

Instructions

  1. Preheat oven to 325°F (or 350°F depending on source) and grease and flour a tube or loaf pan.
  2. In a large bowl, whisk together vegetable oil, granulated sugar, and eggs until creamy.
  3. In a separate bowl, sift together flour, baking soda, cinnamon, and salt.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. Stir in vanilla extract, chopped apples, and pecans until evenly distributed.
  6. Pour batter into prepared pan and bake for about 1 hour, checking with a toothpick at 50 minutes for doneness.
  7. While cake cools slightly, prepare caramel glaze by melting butter in a pan, then adding brown sugar and milk.
  8. Bring glaze to a boil, then simmer while stirring for 10 minutes until thickened.
  9. Stir in vanilla extract and let glaze cool slightly before pouring over warm cake.

Notes

This cake is best served warm or at room temperature. For an extra touch, sprinkle a little sea salt on the caramel glaze for a sweet-salty contrast. Using Granny Smith apples ensures a tart balance to the sweet caramel.
