Apple Coffee Cake with Cream Cheese Filling

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 2 medium apples, peeled and diced
  • 1 tsp ground cinnamon
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla. Alternate adding flour mixture and sour cream.
  4. Toss diced apples with cinnamon. In a separate bowl, mix cream cheese, 1/4 cup sugar, and egg yolk until smooth.
  5. Spread half the batter in the pan. Layer with cream cheese mixture and apples. Top with remaining batter.
  6. Bake for 45-50 minutes until a toothpick comes out clean. Cool before serving.
