Apple Bread with Cinnamon Pecan Crunch

This easy quick, sweet bread is plump full of apple chunks and chopped pecans, topped with a cinnamon pecan sugar mixture that adds a light extra crunch. It is loaded with flavor from apples, spices, and pecans, and tastes even better the second day.

  • 1 3/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2 1/2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 2 large eggs
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 2 tablespoons cinnamon applesauce
  • 1 tablespoon vanilla extract
  • 2 cups peeled, finely chopped Fuji apples
  • 1 cup toasted chopped pecans
  • 2 tablespoons sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a medium bowl, whisk together flour, cinnamon, nutmeg, salt, and baking powder.
  3. In a large bowl, beat eggs, sugar, vegetable oil, cinnamon applesauce, and vanilla extract until combined.
  4. Add dry ingredients to wet ingredients and mix just until incorporated.
  5. Fold in chopped apples and half of the toasted pecans.
  6. Pour batter into the prepared loaf pan.
  7. In a small bowl, combine remaining pecans, sugar, brown sugar, and cinnamon; sprinkle evenly over the batter.
  8. Bake for about 40 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

This bread freezes well and tastes even better the next day. For extra flavor, use Fuji apples and toast the pecans before adding. The cinnamon pecan topping adds a delightful crunch to the soft bread.
