Antipasto Charcuterie Wreath

A festive and delicious antipasto wreath made with an assortment of cured meats, cheeses, olives, and vegetables arranged on skewers and shaped into a wreath. Perfect for holiday gatherings and parties.

  • 1 pint grape tomatoes
  • 8 oz small mozzarella balls (or fresh mozzarella cut into cubes)
  • 6 oz prosciutto, sliced
  • 6 oz salami, sliced
  • 12 oz marinated artichoke hearts, drained
  • 12 oz roasted red peppers, sliced
  • 1 cup green olives, drained
  • 1 cup black olives, drained
  • 1 cup marinated mushrooms, drained
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh rosemary sprigs
  • 1/4 cup fresh parsley leaves
  • 1/4 cup balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Large toothpicks or 6-inch skewers

Instructions

  1. In a medium bowl, whisk together olive oil, balsamic glaze, garlic, basil, and oregano. Season with salt and pepper to taste.
  2. Drain mushrooms and artichoke hearts. Add mushrooms and artichoke hearts to the bowl of marinade, toss to coat. Cover and chill for several hours or overnight.
  3. Fold salami slices in quarters. Cut ham and mortadella slices in half, fold and/or roll into bite-sized parcels. Slice pepperoni sticks into 1-inch pieces. Slice roasted red pepper into 1/2-3/4 inch wide strips. Drain olives and mozzarella balls.
  4. Arrange your ingredients on your work surface, along with a large baking sheet to put your finished skewers on.
  5. Randomly thread ingredients onto skewers, aiming to get some form of meat, cheese, olive, and vegetable on each stick. Place larger items closer to the handle side of the skewer.
  6. Arrange skewers in a wreath shape on a large round serving platter, handle end facing out. Fill in any gaps with parsley, basil leaves, or sprigs of rosemary.
  7. Drizzle with a little olive oil and balsamic glaze. Tuck in more sprigs of rosemary to give the dish a wreath-like appearance. Garnish with a little freshly cracked pepper and serve.

Notes

For best flavor, marinate the vegetables overnight. Use a variety of meats and cheeses for a more colorful and flavorful wreath. Serve immediately or cover and chill until ready to serve.
